Winemaking :
Grapes chosen at hand harvested at full maturity. Maceration pre-fermentation with delicates repeated pigeages for an optimum extraction of the noble material of the grape. A long rest during the alcoholic fermentation improve the complexity of the wine.

Raising :
Aged in new oak barrels where malolactic fermentation takes place.

Wine and Food :
Serve with a beef tenderloin in a gravy sauce, it will also be a nice companion with fermented cheeses.
