Farming: Organic
Grape: Grenache 80%, Shiraz 10%, Cabernet Sauvignon 10%.
Ground: Soil of rolled pebbles, clay-limestone subsoil. Rolled pebbles have the particularity of restoring the stored heat to the vine during the day. Their exceptional draining capacity makes it possible to quickly evacuate the excess water and to avoid the development of diseases. Summer breezes and the Mistral preserve the freshness and purity of the fruit and are beneficial for the state health of the vines.
Viticulture: Yields are 45 hectoliters/hectare. The vines are grown in double Cordon de Royat; the bunches thus benefit from good ventilation and direct sunshine.
Elaboration: Mechanical harvest at the end of the night. Fermentation at controlled temperature in stainless steel vats.
Alcohol: 13.5 ° vol
Tasting note: Pretty garnet colour. Roundness, sour cherry, raspberry, pepper. Unctuous and charming finish.
